The Copper Bar Ranch raises 100% pasture-raised, grass-fed Scottish Highland cattle in the high country of Western Colorado. Never put on trailers, never stressed, and always naturally finished.

Like wine, beef reflects the land. Our highland cattle are slow-matured natural foragers who thrive on a diverse diet across the mountains, hills, and valleys of open range in the Vail Valley. Similar to bison and leaner than wild game, their open range lifestyle creates a flavor profile rich in protein, low in cholesterol and fat, and high in taste – all without hormones or steroids. 

Our cattle are also raised with the highest standards of animal husbandry, with every effort taken to minimize stress on the animal throughout its life by field harvesting our cattle, an uncommon yet humane practice that simply cannot be replicated by big industrial feedlots and many other ranches.

Scottish Highland Beef takes an extra year to mature to perfection compared to angus. Grass-fed and never finished on grain, our cattle are true ranch-to-table perfection after this extra year of aging.

Field harvesting of our beef ensures that every animal is processed with care individually and never trailered to a slaughterhouse hours away from their range.

Unlike other ranches, we aren’t simply selling you a share of beef. We believe in strengthening the relationship our customers have with their food.

When you buy from The Copper Bar Ranch, you’re investing in an ownership share of the animal prior to processing. We register your ownership share with the Colorado Department of Agriculture, making you an important member of our team.

How to choose a share:

  • To purchase a quarter, buy 1 ($100 deposit)

  • To purchase a half, buy 2 ($200 deposit)

  • To purchase a whole, buy 4 ($400 deposit)

Price by the pound:

  • $100 down deposit for all quarter shares. Beef is $10/lb.

    • A quarter beef (100-115 lbs) will yield approximately 75 - 100 meals for a small family

      • 100-115lbs @ $10/lb = $1,000 - $1150

Where can I store my beef?

  • A quarter order of beef requires 4-8 cubic-feet of freezer space.

  • A half order of beef requires 10-12 cubic-feet of freezer space

  • A whole order of beef requires 24 cubic-feet of freezer space

    We do not ship beef but accommodate local Edwards and Denver pick-ups with a handshake and a beer. Pickup locations and final prices will be announced one week prior to pick-up.
